Are you looking for a true Italian recipe ? Or for an ancient traditional Italian recipe ? Ask to an Italian...I love cooking and I'm an intermediate cooker, email me I will give you Italian suggestion and tips on cooking in the Italian way. And tons of recipes !

Ciao bellissima.

I am a chef and a teacher in Pismo Beach, California.

I teach a cooking-gardening class to college students.

I would like to present to them some recipes that are authentically "ancient" Italian/Roman.  That is, these recipes must not include fruits nor vegetables that were brought back from the Americas by Christobol Columbo.  There can be no tomatoes nor peppers (Capsicum) nor anything else that is not native to the Mediterranean or brought in by ancient civilizations (e.g. Arab merchants).

Do you have such recipes?

I would be glad to reciprocate with any of thousands of International or American Regional recipes that I have collected.
